A Taste of Brittany
The salt we use at Ollia is harvested right beside David’s family home Brittany. This region in France is known for crêpes, cider, seafood and salted butter, and has a culinary identity shaped by its proximity to the sea. Salt has been harvested here using traditional salt marshes, where seawater moves through shallow ponds and evaporates naturally with the sun and wind.
